Dibek is the name for a type of stone that is used for a mortar. In the past these mortars were used for crushing wheat and barley. It also was the way coffee beans were ground before the grinders were invented. Needless to say, it is much easier to ground a pound of coffee with a grinder then by a mortar. However, there is a one big difference: unlike grinders, when a mortar is used to ground coffee none of the oils are lost! This is why the dibek coffee is so much richer and more flavorful. Turkish coffee is delicious to begin with but the Dibek coffee is the ultimate way to have it.

The Story Gönen family started with grandfather Hüseyin Gönen in 1939. He started to serve hand ground coffee to known coffee addicts around city of Izmir’s Kemeralti district. It was an immediate hit and it took off. Later on his son Yusuf (Joseph) took over the business and introduced the first coffee mortar machine invented by a fellow roaster named Yasar Usta. Business thrived and today it is still a family run business headed by the grandson Ilyas with a company tag line “From Grandfather to Grandchild”. They now have several patents for some of their coffee flavors.
